An Ode to Dolores

Our very own Saint Lucie Wild Yeast, Winston is the heart of our microbakery. He is the wild yeast that breathes life to our artisan sourdough breads and treats.

All of our sourdough breads go through a long and slow fermentation process, which increases bioavailability of beneficial antioxidants, that are good for our gut microbes. This has been suggested to help us on our immunity and overall health.

Ingredients matter.

We strive to source flour, grains, produce, and ingredients as high quality and locally as possible. We take the natural ingredients one step further by including home grown organic herbs and other garden products in the bake, when available.

Good flour makes good breads.

We use beautiful unbleached, unbromated, and high extraction flour for the best flavor and health benefits.
